About Chef Joseph Chouinard
Chef Chouinard gained his first culinary experience at the landmark Anthony's Pier 4 in Boston, MA. A graduate of the Culinary Institute of America and an apprentice at the 5-star La Vieille Maison restaurant, Chouinard then attended Florida International University in hotel restaurant management while working for the acclaimed Chef Alian Petitbon as Sous Chef Saucier at his Gault Millau celebrated restaurant in Fort Lauderdale, FL.
There, he was first introduced to catering by Chef Alian who told Chef Chouinard "if you can cook for 2 you can cook for two thousand." That observation inspired Chef Chouinard to venture to New York to work at Windows on the World and Le Cirque. He took the Executive Chef position at Nikolias Roof and became one of the youngest 4 Star Mobile Travel Guide recipients in the country.
Soon after, Chef Chouinard opened his first award winning restaurant Chouinard's of Charleston, which was nominated as "Best Restaurant in Charleston" - five years running.
Not only has Chef Chouinard helmed award-winning restaurants, he has been a culinary instructor at The Art institute. Additionally, he was Chef Partner and Director of Operations for two of the finest restaurants in Florida: Redwoods and Pacific Wave restaurants, receiving top honors locally, as well as nationally. He also created the 717south Menu concept in Tampa creating two cuisines on one menu without fusing them.
His most recent position was that of Executive Chef and Director of F&B for the one of the top five catering company in Los Angeles, CA. Says Chouinard, "I have been blessed in my career with a wonderfully supportive family and so many great mentors." He has now been operating Chouinard's Cuisine to customer and critic raves since 2008.
